Have you heard of World Apple Day? What better way to celebrate it than by sharing this apple cake recipe and remind you of a few other easy autumnal puddings and cakes made with the humble apple.
This is a lovely stodgy pudding type cake which is nice to eat cold by the slice or great served warm with custard.
World Apple Day began in England in 1990 not only to celebrate apples and orchards but to bring awareness of the UK landscape, ecology, and its countryside customs. Many local and large organisations, such as the Women’s Institute, National and Wildlife Trusts, join in with this national day.
65g natural yoghurt
160g sifted plain flour
65g softened butter
10g baking powder
2 apples either chopped or thinly sliced
soft brown sugar to sprinkle on top
cinnamon and sultanas (optional)
(All mixed in a blender unless stated)
Preheat oven to 160
Start by mixing the eggs and sugar
Add in the yogurt and flour and mix in well.
Add milk, butter, lemon zest, and baking powder and mix until smooth and creamy
Stir in the apple pieces by hand, (and sultanas and cinnamon if desired)
Pour into a lined baking tin and sprinkle brown sugar over the top
Cook for approx 45 mins.
